Updated: Mar 24

As I sat reflecting on my fast-paced day at Excelsior, a whirlwind of responsibilities and obligations, I reviewed my to-do list to see what I could check off. An unexpected visitor, a Midlothian, Texas Chicken Salad Chick restaurant manager, stopped by our preschool, bearing a sample of their offerings. Famished and intrigued, I eagerly accepted the gesture, little knowing that it would lead me down a path of discovery. With a “Fancy Nancy” in hand, adorned with Fuji apples, seedless grapes, and pecans, I couldn’t help but wonder about how Chicken Salad Chick started.
