As I sat reflecting on my fast-paced day at Excelsior, a whirlwind of responsibilities and obligations, I reviewed my to-do list to see what I could check off. An unexpected visitor, a Midlothian, Texas Chicken Salad Chick restaurant manager, stopped by our preschool, bearing a sample of their offerings. Famished and intrigued, I eagerly accepted the gesture, little knowing that it would lead me down a path of discovery. With a “Fancy Nancy” in hand, adorned with Fuji apples, seedless grapes, and pecans, I couldn’t help but wonder about how Chicken Salad Chick started. So, spurred by curiosity, I began a quick search and delved into the story of Stacy Brown.

Born and raised in Alabama, she grew up immersed in the warmth of Southern hospitality and the comforting embrace of homemade cuisine. Yet, her path to success was far from straightforward.
